Keto Cauliflower Mac and Cheese

A satisfying alternative to traditional mac and cheese, this keto version incorporates cauliflower florets smothered in a creamy cheddar cheese sauce. With heavy cream, cream cheese, and Dijon mustard, it's a rich and comforting dish perfect for a low-carb dinner.

Ingredients:

  • 1 medium cauliflower, cut into florets
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup heavy cream
  • 2 tablespoons cream cheese
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Chopped chives for garnish (optional)

Instructions:

  1. Steam or boil cauliflower until tender.
  2. In a saucepan, combine heavy cream, cream cheese, Dijon mustard, salt, and pepper. Stir until smooth.
  3. Add shredded cheddar cheese to the sauce and stir until melted.
  4. Pour the cheese sauce over the cauliflower and toss to coat.
  5. Garnish with chopped chives and serve as a delicious low-carb alternative to mac and cheese.
